Macadamia & cocanut cookies

A few days ago after a bad day at work, I decided to do something fun....so I made cookies. Jonny was so wonderful in going to the grocery store at 9pm to get me eggs.

The recipe was from my Williams and Sanoma Cookie book.


First, I gathered the materials....and electron wanted to help.


Mix the dry ingredients for the crust in a blender and add butter.


Spread the crumbs as a crust and bake. This was a very interesting technique. In the end most of the crumb stuck together.


I used two pans to double the recipe. I'm glad I did because there would have been too little otherwise.


Adding eggs. It was very hot in the kitchen.


The top of the cookie was a Carmel like mixture with nuts and cocanut. It called for light corn suryp, but I substituted half of it with honey in an attempt to make it healthier.

Personally, I thought it was too sweet...but they were all gone by the end of the day.
